Is it at all possible that the one true church is the catholic (universal) church referred to in the Apostle's Creed?

Yes but the term "catholic" meaning universal does not mean all the various Protestant denominations of today but it refers to the fact that the Catholic Church is universally found. So the "catholic" Church is the "Catholic Church."
